These are the perfect bite size energy balls to make ahead and have throughout the week. If they will even last that long. There may have been a few casualties before I even finished taking these pictures. (There totally was.)
Oatmeal based energy bites are not a new concept, but these are packed with some hidden healthy fats and proteins that not only taste delicious but will actually keep you satiated for a while. I started with Sunflower Butter instead of peanut butter. You still get the protein, but with some added healthy fats and more of a nutritional punch. It’s also a great alternative for people with a nut allergy and is safer for the little ones to take to school. I also added Hemp seeds and shredded unsweetened coconut. Hemp seeds are a very digestible protein and a great source of the essential fatty acid Omega 3. And of course, we have to add the chocolate chips just for fun. I like to use dairy free, dark chocolate mini chocolate chips for this recipe. Finish it off with some raw, local honey to hold it all together and you got yourself a great little ball of nutritional energy!
I love to have these with my morning coffee on days I have an early commute and need a portable breakfast option or they are great to pop in the freezer and then into a lunch box if you have little ones. Enjoy!
A simple, 6 ingredient, no bake & gluten free energy ball recipe
- 1 Cup Gluten Free Old Fashioned Oats
- 1/4 Cup Unsweetned Coconut Flakes
- 1/4 Cup Hemp Seeds
- 1/2 Cup Sunflower Seed Butter (Unsweetened if possible)
- 1/8 to 1/4 Cup Honey (Raw & Local if possible)
- 1/8 Cup Mini Chocolate Chips
Add all ingredients in a medium size mixing bowl and stir together.
Take about a tablespoon of the mixture and roll into about a golf ball size ball.
(If you find that the balls are little crumbly, drizzle a little more honey and mix together to make the mixture more tacky. If I have sweetened sunflower butter, I start with 1/8 cup and only add more if the mixture is too dry. If it is unsweetened, I will add up to 1/4 cup of honey.)
Place the balls on non greased baking sheet and refrigerate for about 15 minutes to firm.
Store in a sealed container in the refrigerator or freezer.
